- 4 cups arugula
- 1 ripe avocado, diced
- 1/2 cup shaved Parmesan cheese
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt to taste
- Black pepper to taste
Instructions
- 1Wash arugula thoroughly and dry — 2 minutes
- 2In a large bowl, combine arugula and diced avocado — 2 minutes
- 3Drizzle olive oil and balsamic vinegar over the salad — 1 minute
- 4Sprinkle shaved Parmesan cheese on top — 1 minute
- 5Season with salt and black pepper to taste — 1 minute
- 6Toss the salad gently to combine all ingredients — 2 minutes
