  • 2 large heads romaine lettuce, very finely chopped. Strips should be less than 1 cm wide
  • 1 large bunch fresh dill. Use the entire pack, stems removed, finely chopped
  • 3 to 4 green onions or scallions, finely chopped
  • 1/2 block feta cheese (Greek or Israeli feta with a more gamey, salty flavor)
  • 1 cup Persian or English cucumber, finely chopped
  • 1/2 cup pomegranate seeds
  • 1/4 cup fresh lemon juice
  • 1/4 cup good quality olive oil
  • 1 clove garlic, finely grated or minced
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. 1Finely chop the romaine and place it in a large bowl.
  2. 2Add the chopped dill, green onions or red onion, feta, cucumber, and pomegranate seeds. Toss gently to combine.
  3. 3In a small bowl, whisk together the lemon juice, olive oil, garlic, salt, and pepper.
  4. 4Dress the salad right before serving and toss well.
  5. 5Serve immediately.
