Ingredients
- 2 large heads romaine lettuce, very finely chopped. Strips should be less than 1 cm wide
- 1 large bunch fresh dill. Use the entire pack, stems removed, finely chopped
- 3 to 4 green onions or scallions, finely chopped
- 1/2 block feta cheese (Greek or Israeli feta with a more gamey, salty flavor)
- 1 cup Persian or English cucumber, finely chopped
- 1/2 cup pomegranate seeds
- 1/4 cup fresh lemon juice
- 1/4 cup good quality olive oil
- 1 clove garlic, finely grated or minced
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- 1Finely chop the romaine and place it in a large bowl.
- 2Add the chopped dill, green onions or red onion, feta, cucumber, and pomegranate seeds. Toss gently to combine.
- 3In a small bowl, whisk together the lemon juice, olive oil, garlic, salt, and pepper.
- 4Dress the salad right before serving and toss well.
- 5Serve immediately.
