Ingredients (one per line)
2 large heads romaine lettuce, very finely chopped. Strips should be less than 1 cm wide 1 large bunch fresh dill. Use the entire pack, stems removed, finely chopped 3 to 4 green onions or scallions, finely chopped 1/2 block feta cheese (Greek or Israeli feta with a more gamey, salty flavor) 1 cup Persian or English cucumber, finely chopped 1/2 cup pomegranate seeds 1/4 cup fresh lemon juice 1/4 cup good quality olive oil 1 clove garlic, finely grated or minced Salt, to taste Freshly ground black pepper, to taste
Instructions (one step per line)
Finely chop the romaine and place it in a large bowl. Add the chopped dill, green onions or red onion, feta, cucumber, and pomegranate seeds. Toss gently to combine. In a small bowl, whisk together the lemon juice, olive oil, garlic, salt, and pepper. Dress the salad right before serving and toss well. Serve immediately.
