Ingredients
- 200g pasta (spaghetti or linguine)
- 300g halibut fillet
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup white wine
- 1/4 cup fresh basil, chopped
- Salt to taste
- Pepper to taste
- Grated Parmesan cheese (for serving)
Instructions
- 1Boil water in a large pot and cook pasta according to package instructions — 10 minutes
- 2While pasta cooks, heat olive oil in a skillet over medium heat — 1 minute
- 3Add minced garlic to the skillet and sauté until fragrant — 1 minute
- 4Add halibut fillet to the skillet, season with salt and pepper, and cook until golden brown — 4 minutes per side
- 5Remove halibut from skillet and set aside — 1 minute
- 6In the same skillet, add cherry tomatoes and cook until softened — 3 minutes
- 7Pour in white wine and let simmer until reduced by half — 2 minutes
- 8Flake the cooked halibut into bite-sized pieces and return to the skillet — 1 minute
- 9Drain pasta and add to the skillet, tossing to combine with the sauce — 2 minutes
- 10Stir in fresh basil and adjust seasoning if necessary — 1 minute
- 11Serve hot, topped with grated Parmesan cheese — 1 minute
