  • 200g pasta (spaghetti or linguine)
  • 300g halibut fillet
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine
  • 1/4 cup fresh basil, chopped
  • Salt to taste
  • Pepper to taste
  • Grated Parmesan cheese (for serving)

Instructions

  1. 1Boil water in a large pot and cook pasta according to package instructions — 10 minutes
  2. 2While pasta cooks, heat olive oil in a skillet over medium heat — 1 minute
  3. 3Add minced garlic to the skillet and sauté until fragrant — 1 minute
  4. 4Add halibut fillet to the skillet, season with salt and pepper, and cook until golden brown — 4 minutes per side
  5. 5Remove halibut from skillet and set aside — 1 minute
  6. 6In the same skillet, add cherry tomatoes and cook until softened — 3 minutes
  7. 7Pour in white wine and let simmer until reduced by half — 2 minutes
  8. 8Flake the cooked halibut into bite-sized pieces and return to the skillet — 1 minute
  9. 9Drain pasta and add to the skillet, tossing to combine with the sauce — 2 minutes
