- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 cups chicken broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups mole sauce (store-bought or homemade)
- 1 cup chopped cilantro for garnish
- 1 lime, cut into wedges for serving
Instructions
- 1Preheat the oven to 350°F (175°C) — 10 minutes
- 2Rinse the turkey under cold water and pat dry with paper towels — 5 minutes
- 3Rub the turkey with olive oil, salt, and black pepper, ensuring even coverage — 5 minutes
- 4Place the turkey breast-side up in a roasting pan — 2 minutes
- 5Add chopped onion and minced garlic around the turkey in the pan — 3 minutes
- 6Pour chicken broth into the bottom of the roasting pan — 2 minutes
- 7Cover the turkey loosely with aluminum foil — 2 minutes
- 8Roast in the preheated oven for 1 hour and 15 minutes, basting occasionally — 75 minutes
- 9Remove the foil and brush the turkey with mole sauce — 2 minutes
- 10Continue roasting uncovered for an additional 30 minutes, or until the internal temperature reaches 165°F (74°C) — 30 minutes
