Ingredients
- 2 cups cooked rice
- 2 tablespoons vegetable oil
- 2 large eggs, beaten
- 1 cup mixed vegetables (carrots, peas, corn)
- 3 green onions, chopped
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- 1Heat vegetable oil in a large skillet over medium-high heat — 1 minute
- 2Add beaten eggs and scramble until fully cooked — 2 minutes
- 3Remove eggs from skillet and set aside — 30 seconds
- 4Add minced garlic and mixed vegetables to the skillet, stir-frying until vegetables are tender — 3 minutes
- 5Add cooked rice to the skillet, breaking up any clumps — 1 minute
- 6Stir in soy sauce, sesame oil, and cooked eggs, mixing thoroughly — 2 minutes
- 7Add chopped green onions, and season with salt and pepper to taste — 1 minute
- 8Stir-fry everything together until heated through — 2 minutes
