  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. 1Heat vegetable oil in a large skillet over medium-high heat — 1 minute
  2. 2Add beaten eggs and scramble until fully cooked — 2 minutes
  3. 3Remove eggs from skillet and set aside — 30 seconds
  4. 4Add minced garlic and mixed vegetables to the skillet, stir-frying until vegetables are tender — 3 minutes
  5. 5Add cooked rice to the skillet, breaking up any clumps — 1 minute
  6. 6Stir in soy sauce, sesame oil, and cooked eggs, mixing thoroughly — 2 minutes
