Ingredients
- 1 cup couscous
- 1 cup vegetable broth
- 1 lemon, zested and juiced
- 2 tbsp olive oil
- 1/2 cup chopped parsley
- Salt and pepper to taste
Instructions
- 1Bring broth to a simmer and pour over couscous.
- 2Cover and let sit for 5 minutes, then fluff with a fork.
- 3Stir in lemon zest, lemon juice, olive oil, and parsley.
- 4Season with salt and pepper.
